Tofu Salad Dressing

Serves four
Ingredients
170 g tofu, welldrained
2 tbs vegetable oil
2 tbs cider orwine vinegar
salt and pepper totaste
pinch of garlic (optional)
pinch of curry ormustard powder (optional)
chopped fresh herbs (optional)

Preparation
Either mash the tofu well with a fork and then mix with the other ingredients or put them together in a blender.
Serve chilled.
Best if used within a few days.
