Chipotle Mashed Potatoes

Serving Size: 6
2 lbs medium redpotatoes (peeled or unpeeled) -- cut into chunks
6 tbs margarine
1/2 cup chipotle salsa
1/4 cup fresh cilantro-- chopped
salt to taste (approx.1 tsp)

Place potatoes in a large saucepan with water to cover.
Bring to a boil, reduce heat to medium low, and cook until potatoes are fork tender, about 20 minutes.
Drain and return potatoes to the pot.
Set the pot over low heat and add the argarine, chipotle salsa, cilantro, and salt.
Mash until potatoes are as smooth as you like.
Taste and adjust seasonings.
