Ingredients
1 cup |
chopped onion |
|
1 cup |
chopped greenpepper |
|
2 tbs |
margarine or oil |
|
2 cup |
sliced mushrooms |
|
1 can |
(15 oz.) tomato sauce (or 1 large can tomatoes) |
|
2 lb |
firm tofu |
|
1/4 cup |
tomato paste with |
|
1 tbs |
sugar (or 1/3 c. catsup) |
|
1 tsp |
cumin |
|
1/2 tsp |
basil |
|
1 tsp |
salt |
|
|
Preparation
Saute onion & pepper in margarine or oil.
Add mushrooms & saute about 2 minutes.
Stir in tomatoes & spices & simmer about five minutes.
Cube tofu & add & simmer another 5 to 10 minutes.
Ladle over rice or lightly toasted burger buns & serve.
