Tofu Joes

1 cup chopped onion
1 cup chopped greenpepper
2 tbs margarine or oil
2 cup sliced mushrooms
1 can (15 oz.) tomato sauce (or 1 large can tomatoes)
2 lb firm tofu
1/4 cup tomato paste with
1 tbs sugar (or 1/3 c. catsup)
1 tsp cumin
1/2 tsp basil
1 tsp salt

Saute onion & pepper in margarine or oil.
Add mushrooms & saute about 2 minutes.
Stir in tomatoes & spices & simmer about five minutes.
Cube tofu & add & simmer another 5 to 10 minutes.
Ladle over rice or lightly toasted burger buns & serve.
