Vegan Vanilla Cake

Mix these dry ingredients:
Ingredients
2 cup soft speltflour
1 tbs baking powder

Preparation
In another vessel, mix these wet ingredients


  • 1/3 c oil

  • 2/3 c maple syrup

  • 2 tsp vanilla

  • 1 c vanilla Vitasoy (or whatever)



Mix all together. Put in a Bundt pan and bake at 350 F for 30 minutes.

I don't think it needs icing, but if you disagree you could try mixing up icing sugar with margarine and a bit of soy milk.
