Lemon Mousse

serves 2-3
450 ml water
pinch sea salt
3 tbs agar flakes
concentrated apple juice and/ormalt syrup as sweeteners, to taste.
1 tbs finely gratedlemon rind
few drops vanilla essence(optional)
2 tbs tahini

Bring the water to the boil, add all the ingredients and simmer for 10 minutes, until the agar flakes are completely dissolved.
Pour this mixture into a glass or ceramic container and leave to cool and set (approx 1 - 2 hours).
Blend into a creamy consistency (either by hand or with a blender), adding a little water or fresh apple juice if the consistency is too thick.
Serve the mousse chilled or at room temperature.
